Ingredients

1 ½ tablespoonolive oil
divided
6 ounceboneless skinless chicken breast
cut into 1/2-inch strips
¼ teaspoonkosher salt
divided
¼ teaspooncoarsely ground black pepper
divided
10red cherry tomatoes
or yellow, or grape, sliced in half
2 ouncesbocconcini
3-4 small mozzarella balls
1 teaspoonbalsamic vinegar
⅛ teaspoonitalian seasoning
⅛ teaspoongarlic powder
basil leaves
fresh torn, optional
Instructions
Step 1
In a 10-inch skillet over medium-high heat, heat ½ tablespoon of oil 30 seconds. Place chicken in skillet, season with ⅛ teaspoon of salt and ⅛ teaspoon of pepper, and cook 6 minutes until all pieces are cooked through. Transfer chicken to a medium sized bowl.
Step 2
Add the tomatoes to the bowl with the chicken.
Step 3
Quarter the bocconcini and add to the bowl.
Step 4
In a small bowl, whisk together the remaining 1 tablespoon of olive oil, balsamic vinegar, ⅛ teaspoon salt, ⅛ teaspoon pepper, Italian seasoning and garlic powder. Pour over the salad ingredients and toss to combine.
Step 5
Top with fresh basil, if using and serve.
