Instructions

Step 1
Preheat oven to 425 and lightly coat a sheet pan with oil or cooking spray
Step 2
Place the gnocchi and chopped veggies in a large bowl, Add the olive oil and a pinch of salt and pepper and toss until everything is coated.
Step 3
Spread in a single layer on the prepared sheet pan. Scatter the sliced sausage among the other ingredients.
Step 4
Bake until the veggies are tender (20-25 min) tossing halfway through. Add the spinach and continue baking till slightly wilted.
Step 5
Dollop with the pesto and toss before serving.
