Turkey strawberry spinach feta cheese salad with candied pecans

5 cupsbaby spinach
turkey lunch meat

1 ptfresh strawberries
fresh blueberries
½ cupcrumbled feta cheese
1 cupVanilla Cinnamon Candied Pecans

Instructions
Step 1
1. I like to make the candied pecans in advance because they take about a half hour to make. Plus, they store well to keep around for snacks.

2. To make the vinaigrette place the strawberry jam in a large bowl and whisk in the vinegar until well mixed. Keep whisking the mixture and slowly add in the olive oil. Whisk until the dressing doesn't look like it's separating. Season with salt and pepper.

3. I llay out the spinach, turkey, strawberries, blueberries, feta cheese and pecans in bowls and let everyone make how they want.

4. You can use this dressing or a good Italian dressing is also good.
Candied pecans
Step 5
1. Combine butter, water, erythritol, vanilla, and cinnamon in a non-stick pan. Bring to a simmer.
Step 6
2. Stir in pecans and continue to stir until sugars begin to crystallize.
Step 7
3. Take off heat and spread over a tray lined with parchment paper. Leave to cool for 15 minutes.
