Instructions
Step 1
Heat the oil in a very large skillet over medium high heat.
Step 2
Add carrots to the pan cut side down. Cook for 5 to 7 minutes without stirring until golden brown, then turn the carrots.
Step 3
Add remaining ingredients except parsley. Stir once then allow to cook until the water has evaporated and carrots start to caramelize - about 3 minutes.
Step 4
Stir once or twice until caramelized, then transfer to serving dish.
Step 5
Sprinkle with parsley and serve warm
