Use a star-shaped nozzle for authentic churros texture, but any nozzle will do in a pinch. It's best to eat them warm, so serve immediately after frying.

• In a small saucepan over medium heat, combine water, sugar, salt, and the vegetable oil. Bring to a boil and remove from heat. • Stir in flour until mixture forms a ball. • Heat oil for frying in a deep-fryer or deep skillet to 375 degrees F (190 degrees C). • Pipe strips of dough into the hot oil using a pastry bag with a star-shaped nozzle. Fry until golden brown, about 2 to 3 minutes. • Drain on paper towels. Combine sugar and cinnamon. Roll drained churros in the cinnamon-sugar mixture. • For the chocolate sauce, break the chocolate into small pieces and place in a bowl. Heat the cream in a small saucepan. Once the cream is hot, pour over the chocolate, let it sit for 2 minutes, then stir until smooth. • Serve churros immediately with the chocolate sauce for dipping.
