For dulce de leche
For churros batter
For the cinnamon sugar
Instructions
Step 1
1. For the dulce de leche. Add milk, sugar and baking soda into a medium sized saucepan and bring to the boil.
Step 2
2. Once boiling, cut the heat and reduce to a simmer for 1.5-2 hours. Stirring often.
Step 3
3. After 1 hour stir constantly to prevent the milk solids burning. Remove from heat when thickened and caramelised.

4. For the churros. Add butter, caster sugar and water into a saucepan and bring to the boil.

5. Once boiling, remove from the heat, add flour and stir to combine fully.
Step 6
6. Place back on high heat and cook, constantly stirring, for 1-2 mins or until smooth and comes off the sides of the pan easily. Remove from heat and allow to cook for 10 mins

7. Heat a deep fryer or pot of vegetable oil to 160°C
Step 8
8. Once cool, stir in 2 eggs, one at a time and mix until smooth.
Step 9
9. Add to a piping bag with an 11mm fluted piping tip. Pipe 7cm long pieces of dough into your hot oil and cut off with scissors
Step 10
10. Allow to cook for 3-5 mins or until golden brown. Take out of oil and briefly drain on a wire rack set over a baking sheet before tossing in cinnamon sugar mixture

11. Set aside for 5 mins before serving
