Instructions

Step 1
finely chop spring onions, and dice the pickles
Step 2
boil the eggs until hard boiled, like 9-11 minutes idk (4-5 mins in the Instant Pot, depending on your pot.) transfer the eggs to an ice bath for 2 minutes, then peel and roughly dice
Step 3
Cube potatoes and boil until really soft (about 15 mins, or 6 mins on HIGH in an Instant Pot) then drain and let cool slightly and then peel the skin off (or don't!)
Step 4
add the eggs and warm potatoes to a bowl and add the mayonnaise, pickles, and most of the spring onions. mix thoroughly until thick n creamy. it must be mixed to the point that the potato is no longer complete cubes.
Step 5
add more mayo if required (you can also add a splash of milk if you want a thinner 'dressing')
Step 6
salt and pepper to taste, and sprinkle paprika over and top with the remainder of the spring onions. garnish with parsley
Step 7
chill for a couple hours, then serve cold
Step 8
