Cooktop Instructions
Step 1
Brown onion and garlic in a large pot. Add meat, bones (if available), and water/broth to cover. Bring to a boil. Turn heat down and simmer 1/2 hour.
Step 2
Add remaining ingredients. Add more liquid if needed, but try not to dilute too much. Bring to a boil.
Step 3
Return to simmer, cover, and heat for 2 3 hours.
IP Instructions (similar to beef stew)

Brown the beef in the Instant Pot in batches so that all sides develop color.
Step 5
Sauté the onion and garlic. Stir in the beef broth, and scrape the bottom of the pot to deglaze it. Not listed. Needs very little liquid. Could use red wine.
Step 6
Add the remaining ingredients. Do NOT stir! This helps avoid the burn warning.
Step 7
Cook on HIGH for 35 minutes, then 10 minutes of natural release.
