Awesome Beef & Cheesey Enchiladas

Oh man, I really love this recipe. It's truly awesome! Most people like corn tortillas with their enchys, but I prefer flour...by all means, go with what you like! Sometimes I throw black beans into the meat mixture, Anyway Enjoy!

Ingredients

Beef Enchiladas
1 lbground beef
1onion
chopped
2 tspgarlic cloves
minced
4 ozgreen chiles
diced
1 tablespoontaco seasoning
½ tspcumin
½ tspchili powder
4 ouncescream cheese
softened
28 ozcan enchilada sauce
divided
1 cupmexican blend cheese
8low carb flour tortillas
softened, 8 inch
Cheesey Enchiladas
Instructions
Beef Enchiladas
Step 1
Saute onions in olive oil about 2 minutes. Add garlic and saute an additional 1 minute. Next Brown beef over medium-high heat until browned and veggies are soft.
Step 2
Add all seasoning, green chilies, 1/2 cup of enchilada sauce, stirring until combined.
Step 3
Turn off heat and add cream cheese. Stir until cream cheese has melted into mixture.
Step 4
Pour 1/2 of enchilada sauce into the bottom of a greased 13x9 casserole dish.
Step 5
Dip each tortilla into the enchilada sauce, then spoon about 1/4 cup of meat mixture down the center of each warmed tortilla and roll up. Place enchiladas seam side down in dish.
Step 6
Top enchiladas with remaining enchilada sauce. Then top with cheese. Cover tight with foil.
Step 7
Bake at 350 for 15 minutes. Remove foil and bake an additional 5 min. Serve with rice and beans if you so desire!
Cheesey Enchiladas
Step 8
Dip each tortilla quickly in the chicken broth and fill with about 2 Tbsp of cheese. Roll them up and place them side by side in a baking dish.
Step 9
In a medium sauce pan, melt butter. Whisk in flour and let cook and thicken for 1 minute (DON'T LET IT BURN).
Step 10
Add chicken broth, Cumin, salt and whisk until smooth.
Step 11
Take sauce off the heat and stir in sour cream and green chiles.
Step 12
Pour sauce over the enchiladas and add the remaining cheese.
Step 13
Bake at 350 for 10-15 min or Broil on high for 2 minutes, until the cheese is bubbly.
