1. Sauté ground chicken, veggies, garlic, onion. Add chili powder and salt to taste, along with corn and tomato sauce. Summer for about 5 minutes.
2. Turn off heat and add cheese. 3. Transfer to casserole. 4. Prep the topping. Place water, cornmeal, and 1tsp salt in a small pan, mix and turn on heat until it thickens. Stir in 1 tbsp olive oil or butter. Transfer to the top of the meat and veggie mixture. 5. Bake at 400 for about 15 mins until the top is brown.
