Instructions
Step 1
Preheat the oven to 400°. Line a baking sheet with parchment paper and set aside
Step 2
Add 2 teaspoons of olive oil and Brussels Sprouts to a medium bowl, and toss to coat well.
Step 3
Spread out the oiled Brussels Sprouts on the prepared baking sheet. Roast in the preheated oven for 12 minutes, or until the Brussels Sprouts are browned and crisp. Stir the Sprouts once while cooking to ensure even cooking.
Step 4
Meanwhile, make the dressing by whisking together the remaining olive oil, mustard, lemon juice, garlic, salt, and pepper in a small bowl
Step 5
Remove the Brussels Sprouts from the oven to a large bowl. Add the cooked rice to a bowl and drizzle with the prepared dressing. Toss to coat evening.
Step 6
Divide the mixture into four bowls and scatter each bowl evenly with Avocado slices
