Slow cooker sausage with sweet potato stuffing

Instructions

Step 1
01 Slice white mushrooms.
Step 2
Peel onion and sweet potato.
Step 3
Dice celery, onion, green apple and sweet potato into roughly 1/2-inch pieces.
Step 4
Finely chop sage.
Step 5
Chop pecans and set aside separately
Step 6
Heat 1 tbsp butter in a skillet over medium heat.
Step 7
Remove turkey sausage from casing and add to the pan.
Step 8
Cook about 6 minutes, breaking up the meat with a wooden spoon, until browned but not yet cooked through.
Step 9
Transfer to a slow cooker.
Step 10
Add white mushrooms, onion, celery, green apple and sweet potato to the slow cooker, stir to combine.
Step 11
Sprinkle with sage pecans and dried cranberries.
Step 12
Season well with salt

and pepper.
Step 14
Combine chicken broth and remaining 3 tbsp butter (melted) in a small bowl.
Step 15
Pour over the ingredients and mix to combine, packing mixture down gently.
Step 16
Cook on low 4 to 5 hours, until sweet potato is tender.
