Instructions
Step 1
Hard boil eggs. Peel and halve.
Step 2
Put halved eggs in a large bowl. Add tofu, mustard, salt and hot sauce. Mash with a potato masher until some small chunks remain.
Step 3
Fold in onion and parsley.
Step 4
Cover and chill till serving time.
