Instructions
Step 1
Preheat oven to 350 degrees.

Lightly coat two loaf pans with non-stick cooking spray.
Step 3
Combine egg whites, oil, applesauce, sugar, and extract in a large bowl. Set aside.
Step 4
Combine flour, baking powder, baking soda, salt, and cinnamon in a medium bowl; mix well.
Step 5
Purée your bananas and zucchini in a blender or a food processor.
Step 6
Add your wet ingredients to your dry ingredients and mix until everything is combined.
Step 7
Fold in walnuts, chocolate chips, and coconut flakes.
Step 8
Cook for 35 - 40 minutes and let cool for 30 minutes.
