The world's easiest healthy cookie. Sometimes I even surprise myself with just how delicious a few natural ingredients can be. These cookies are sweet, chewy, cakey and moreish. Not to mention they are sugar-free, gluten-free and use just a few ingredients.

Instructions
Step 1
Preheat the oven to 180°C and line a baking tray with baking paper.
Step 2
In a large bowl combine the almond meal, coconut flour and baking powder. Whisk to ensure there are no lumps or clumps.
Step 3
Add in the mashed banana and mix to form a sticky dough.
Step 4
Roll into cookies using about two tablespoons worth of dough. They don’t spread much so you can shape them into cookies of about 1–2cm in thickness.
Step 5
Bake in the oven for 12–14 minutes until golden brown. Leave to cool for ten minutes then enjoy.
