Ingredients

1 ¼ cupswhole milk

5eggs
large

1 teaspoondijon mustard

kosher salt
to taste

freshly ground black pepper
to taste

3 tablespoonsunsalted butter

3cloves garlic
minced

½ cupgreen onions
sliced

1 x 12 ouncefrozen chopped spinach
package, thawed and squeezed dry

1 cuppeppers
diced mini sweet peppers or 2 red/green peppers

0.25red onion

3artichokes
from can or jar, chopped

½ cupgrape tomatoes
diced

6 cupsgluten free bread
1-inch, cubed

¾ cupshredded Swiss cheese
divided

¾ cupshredded Gruyere cheese
divided

¼ cupparmesan cheese
freshly grated, divided
Instructions
Step 1
In a large bowl, whisk together milk, eggs, Dijon and basil, season with salt and pepper, to taste; set aside.
Step 2

Melt butter in a 12-inch oven-proof skillet over medium-high heat. Stir garlic, red onions, peppers, sauté until tender, add artichokes and spinach until heated through, about 3-5 minutes. Remove from heat.
Step 3
Stir in bread cubes and gently toss to combine. Pour milk mixture evenly over the top. Stir in 1/2 cup Swiss, 1/2 cup Gruyere, and 2 tablespoons Parmesan.
Step 4
Cover and place in the refrigerator for at least 8 hours or overnight.
Step 5
Preheat oven to 375 degrees F. Remove strata from the refrigerator, let sit for 30 minutes.
Step 6
Sprinkle with remaining 1/4 cup Swiss, 1/4 cup Gruyere and 2 tablespoons Parmesan.
Step 7
Place into oven and bake for 25-30 minutes, or until puffed, golden brown and cooked through.
Step 8

Serve immediately.
