Ingredients
68 servings
1 lbground turkey
8 ozcan tomato sauce
6 ozcan tomato paste
1can chili beans
1yellow onion
small, diced
1jalapeno
diced, optional
1red pepper
diced
1yellow squash
diced
1 bagfrozen riced cauliflower
2 cupskale
torn
1 Tbspolive oil
2 Tbspchili powder
1 Tbspcumin
1 Tbspgarlic powder
8 ozlight sour cream
½ cupshredded cheddar cheese
cornbread mix
prepared per box instructions with oil and eggs
Instructions
Step 1
In a large pan, cook ground turkey until done.
Step 2
Add all ingredients except sour cream, cheese and corn bread mix. Stir well. Cook chili mixture on the stove over medium heat for about 10 minutes.
Step 3
While this is cooking, preheat the oven to 375F.
Step 4
Prepare your cornbread mixture per box instructions.
Step 5
After the chili mixture has cooked for about 10 minutes, transfer it to a greased 9” x 13” casserole dish.
Step 6
Sprinkle cheese on top.
Step 7
Drop spoonfuls of the cornbread mixture all over the top of the casserole. Do not stir.
Step 8
Cook for 15-20 minutes. Cornbread should be golden and chili mixture should be bubbly.
