Instructions
For Shoyu
Step 1
Combine Mirin & Soy Sauce. Steep Kombu in mix for 24-48hrs.
Step 2
Heat mixture to 170°F and hold there for 10mins. Remove Kombu when done.
Step 3
Add Bonito Flakes and bring temp to 180°F. Hold for 10 mins.
Step 4
Strain Bonito Flakes out.
Step 5
Refrigerate. Shoyu lasts indefinitely.
For Soup:
Step 6
Heat Stock to desired temp. Then add Shoyu and Schmaltz.
Step 7
Separately, cook Ramen until slightly undercooked. Ramen will continue to cook in broth as you add toppings and serve.
Step 8
Add desired fixins'
