Hello everyone! I’ve a little special recipe for you today.
A very fresh cake with red berries and mascarpone.
I advise you to let it rest in the fridge for at least 2 hours before eating it as a dessert, success guaranteed!

140g of flour
Instructions
Step 1
Mix the flour, sugar, baking powder and set aside.
Step 2
Mix the liquid ingredients: mascarpone, eggs, orange juice and vanilla extract. All these ingredients must be at room temperature.
Step 3
Add the melted butter, and mix again.
Step 4
Mix dry and liquid ingredients.
Step 5
And add your red berries with a little flour so it’s easier to incorporate them.

Mix gently.
Step 7
Lightly butter your pan. I used a 22 cm pan for this recipe.
Step 8
Pour your preparation in the mold.
Step 9
Add some red berries on top, and bake at 180°C for about 40 minutes. Cooking time will vary depending on your oven.
Step 10
Set aside in the fridge for about 2 hours before degustation. Your cake will taste better! You can also add some icing sugar on top.
