Baked Chicken Taquitos with Lime Crema, fresh salsa & avocado

Nicknamed 'golden tacos', taquitos are small rolled and fried tortillas stuffed with your favourite taco fillings! Skip the fryer with our baked version featuring tender diced chicken leg, sauteed with onions and peppers with a cheesy and creamy tomato filling. Generously topped with cabbage, a fresh-made lime crema, diced avocado and fresh tomato salsa!

Instructions

Step 1
PREPARE INGREDIENTS + LIME CREMA

Turn oven on to 400°F with a rack in the centre and one 6 inches from the top.

Wash bell pepper, cut in half and remove stem and seeds.
Step 4
Dice into 1/4 inch pieces.
Step 5
Roughly chop pickled jalapeno.
Step 6
In a small bowl, combine crema base and whipping cream.
Step 7
Drain and pat dry diced chicken with paper towel.
Step 8
Trim any pieces larger than 1 inch.
Step 9
PREPARE FILLING
Step 10
Heat 1 tbsp. olive oil in a large skillet over medium-high.
Step 11
Add chicken, bell pepper, and half of the onion into skillet and cook for 3–4 minutes until chicken is no longer pink.

Season well with salt and pepper.
Step 13
Turn heat to medium-low, add spice blend and cook for 1 minute until fragrant.

Add tomato paste, half of the pickled jalapenos to taste.

Stir in 1/4 cup of the lime crema and turn off heat.

PREPARE + BAKE TAQUITOS

Line a baking sheet with foil.
Step 18
Lay tortillas on a clean countertop.
Step 19
Divide 1/8 of the filling onto each tortilla in a thin 1 inch line down the centre.

Top each with aged orange cheddar and roll into a tube.

Place onto baking sheet, seam side down, brush with a light coating of oil and place into the oven.

Bake taquitos for 10–12 minutes until golden and crispy.

Ensure chicken has reached an internal temperature of 165°F.

PREPARE FRESH SALSA

Wash tomato and cilantro.
Step 26
Pick and finely chop cilantro.

Dice tomato into 1/4 inch pieces.

In a medium bowl, combine tomato, remaining onion, cilantro, and remaining pickled jalapeno to taste.

Season to taste with salt.

PREPARE AVOCADO

Cut avocado in half and remove pit.

Dice into 1/2 inch pieces, then scoop out with a spoon.

FINISH + SERVE

If desired, turn broiler on high to 500°F, move baking sheet to the rack 6 inches from the top and broil for 1–2 minutes.

Monitor closely to prevent burning.

Divide taquitos onto serving plates.

Top with avocado, cabbage, fresh salsa, and remaining lime crema to taste.
