Step 1
Dice the bacon into small segments and cook in a pan over medium heat until crispy.
Step 2
Thinly slice the yellow onion. Remove the bacon from the pan, reserving the fat, and begin to sauté the onion. Add a good pinch of salt and continue to cook until soft.
Step 3
Once softened up, toss in the thinly sliced garlic and jalapeno, and cook for another 30 seconds. Cooking for longer will reduce the fresh, raw chili flavor, if desired.
Step 4
Toss in the drained black beans and the chicken stock. Cook down the chicken stock until almost no liquid is left in the pan.
Step 5
Stir the bacon back in and add the butter. Continue stirring until the butter emulsifies completely.
