Instructions
Step 1
Preheat oven to 200C (fan)
Step 2
Unfold the puff pastry and divide it into 12 equal parts.
Step 3
Spray the muffin tin with the cooking spray and place each square in the centre of the muffin cup.
Step 4
Top with one halved cherry tomato and 1 head of broccoli.
Step 5
In a bowl beat 3 eggs with cream cheese, salt and pepper.
Step 6
Top the muffin cups with the egg mixture equally.
Step 7
Bake for 15 minutes or until golden.
Step 8
Garnish with chopped coriander and enjoy!
