Instructions
Step 1
Peel and chop one carrot.
Step 2
Add avocado oil to a pan on medium heat. Sauté chopped onion, carrot, and peas on medium heat until the carrots soften.
Step 3
Add garlic to the pan and cook for about 30 seconds.
Step 4
Add the cauliflower rice. Continue to cook and mix the contents of the pan until the cauliflower is cooked.
Step 5
Push ingredients to the side and add two whisked eggs directly to the pan. Scramble the eggs for about 1 minute and then mix the eggs with the rest of the ingredients.
Step 6
Add ginger and coconut aminos to the pan and mix. Cook for a few minutes or until the eggs are fully cooked.
Step 7
Serve in a dish and top with green onions.
