Chicken chorizo, potato and greens soup

You could pretty much use any savory chicken sausage (particularly thinking of Italian sausage, but others might work too), and/or use kale, chard or spinach instead of mustard greens. This is just what I had on hand.

Instructions

Step 1
Chop onion and saute in olive oil in large pot.
Step 2
Quarter each sausage lengthwise and chop into small pieces. Add to pot.
Step 3
Cut potatoes into ~ 1 cm pieces and add to pot. (Just keep stirring as you chop things and add them.)
Step 4
Add can of tomatoes, a few tsp of smoked or normal paprika, some black pepper, and about a liter of boiling water (so all ingredients are covered). Bring to a boil, then simmer for ~ 20 minutes, until potatoes are tender.
Step 5
Chop greens, turn off heat and stir into pot (the residual heat will do the cooking, unless planning to serve right away).
