Roasted Red Pepper Chicken with Lemony Garlic Hummus (30-Minute Med...101 p. 240)

Ingredients

1.25 poundsboneless skinless chicken thighs
cut into 1-inch pieces

1 cupsweet onion
or red, cut into 1-inch chunks

2 tablespoonsextra-virgin olive oil

½ teaspoondried thyme

¼ teaspoonblack pepper

¼ teaspoonsea salt

1 x 12roasted red peppers
jar, drained and chopped
lemony garlic hummus
homemade

0.5lemon
medium

3whole-wheat pita breads
6-inch, cut into eighths
Instructions
Step 1
Line a large, rimmed baking sheet with aluminum foil. Set aside. Set one oven rack about 4 inches below the broiler element. Preheat the broiler to high.
Step 2
In a large bowl, mix together the chicken, onion, oil, thyme, pepper, and salt. Spread the mixture onto the prepared baking sheet.
Step 3
Place the chicken under the broiler and broil for 5 minutes. Remove the pan, stir in the red peppers, and return to the broiler. Broil for another 5 minutes, or until the chicken and onion just start to char on the tips. Remove from the oven.
Step 4
Spread hummus onto a large serving platter, and spoon the chicken mixture on top. Squeeze the juice from half a lemon over the top, and serve with the pita pieces.

Swap shrimp, salmon, or cod to make this a broiled seafood meal instead.

You could also use mushrooms or zucchini as the vegetables, but keep an eye on them, as they will cook faster than the onion.
