12boneless skinless chicken thighs
2 tspsalt
2 tsppepper
¼ cupolive oil
2onions
medium, thinly sliced
4cloves garlic
crushed
1 tspturmeric
1 tspcumin
1 tspcoriander
½ tspdried chili flakes
2cinnamon sticks
2bay leaves
3 cupslow sodium chicken stock
2lemons
zest and juice of
1can chickpeas
rinsed and drained
1 cuppitted green olives
½ cupmint
fresh, chopped
2lemons
quartered, optional - to add at the end of the meal
Instructions
Step 1
* Season the chicken all over with s&p
* Heat olive oil in large, heavy bottomed stockpot over medium high heat
* Turn heat down to medium, add onions and garlic and cook until soft, about 5 minutes
* Add turmeric, cumin, coriander, chili flakes, cinnamon sticks and bay leaves and sauté, stirring constantly, until spices are fragrant, about 1 minute. * Add the chicken stock, lemon zest and juice, cover and simmer over low heat for 20 minutes
* Return chicken to pot, add the chickpeas and olives and stir to combine. * Simmer, uncovered, stirring occasionally until sauce has reduced somewhat and chicken is done, about another 20 minutes. * Stir in fresh mint and lemon quarters just before serving
