Instructions
Step 1
Roughly chop the carrot, onion and celery and place them into a large tall sided pot

Step 2
Add in the gammon joint cover with cold water
Step 3
Throw in the peppercorns, cloves and bay leaves
Step 4
Bring the water up to a simmer and cook for 3 hours, skimming off any foam that appears
Step 5
Remove from the pot, take off the string and score the fat with a sharp knife
Step 6
Mix together the honey and mustard and brush half of it over the top and sides of the gammon

Step 7
Place the gammon onto a tray and into a preheated oven at 180. Cook for 30 mins, brush over the remaining honey and mustard halfway through.

Step 8
Enjoy it hot or cold
