Wok oil
3 clovesfresh garlic

white pepper
1chili pepper

30mlsoy sauce
1 tablespoonmsg
1 teaspoonsesame oil

Instructions
Step 1
All the ingredients must be prepared in advance. Chop the garlic finely, clean and grate the ginger root.
Step 2
Chop the shallots, the sweet pepper (remove the seeds) and the spicy chili pepper (the seeds of this can be also removed to make it milder).
Step 3
Break the eggs in a bowl and mix them (traditionally, using chopsticks!). Chop also the spring onion in small bits and put it aside.
Step 4
Add a little oil in the wok and put it on high fire. Keep spreading the oil on the whole pan surface until it smokes. Toss the oil.
Step 5
(If the chilled rice you have was originally already made with garlic and ginger, you can skip this step) Add a little new oil, warm it up, and add the grated ginger and the garlic. Let them fry until fragrant (30 seconds to one minute). Add the chilled cooked rice and toss it for another minute or two. Put the rice aside.
Step 6
Add a new tablespoon of oil. When it's warm, add the chili, the sweet pepper and the shallots. Toss them for a couple of minutes until soft. Add the beaten eggs and let them fry with the vegetables. Keep stirring and tossing the eggs so they form little clumps.
Step 7
Add the rice previously set aside, wet the walls of the wok with the soy sauce, and keelp tossing on high heat. Add the msg and the sesame oil and keep tossing for another minute.
Step 8
Add white pepper and salt to taste.
Serve the egg fried rice in bowls, and garnish with spring onion and sesame seeds.
