Instructions
Step 1
Start by coring every other jalapeño (or all of them, if you don’t want any seeds). Slice all of them into ¼” slices.
Step 2
Get a pan on high heat and add your vinegar, sugar, and spices. Bring to a roaring boil and boil for 5 minutes.
Step 3
Add in your jalapeño slices. Bring back up to a boil and then simmer for 5 minutes.
Step 4
After the jalapeños have been in there for 5 minutes, use a slotted spoon to take them out to cool a bit. Set aside for now.
Step 5
Continue simmering the syrup for 6-7 minutes. While your syrup is simmering, get a nice clean jar and pour some very hot water into it, to warm it up. Let the hot water sit in the jar for about 10 minutes, then empty the jar. (You do NOT want to pour hot liquids into a cold jar, it WILL break!!)
Step 6
Go ahead and put your jalapeños in the jar once the syrup is done simmering. Let the syrup cool for 2 minutes.
Step 7
Ladle the syrup into the jar with the jalapeños until it reaches the top, leaving a little headspace, and all of your jalapeños are submerged.
Step 8
Make sure you don’t just throw away the rest of the syrup! Strain out the seeds and save it to use in other recipes!

This works with most peppers, from bell to Serrano to banana and more! Feel free to add red peppers and whatever else you think could use a spicy and very sweet kick!
