Instructions
Step 1
Start by heating the refried beans in a small pot over low heat, stirring occasionally.
Step 2
While the beans are heating, heat the olive oil in a separate pan over medium heat.
Step 3
Add the finely chopped onion to the pan and sauté until it starts to become translucent.
Step 4
Add the chopped tomato and green chili to the pan, and continue to cook until the tomatoes are well softened.
Step 5
Push the tomato mixture to the side of the pan, and crack the eggs into the pan. Cook the eggs to your desired level of doneness (over easy, over hard, etc.).
Step 6
As the eggs are cooking, heat the tortillas. You can do this in a dry skillet over medium heat, or directly over the flame if you have a gas stove. Heat them until they are warm and pliable.
Step 7
To assemble, spread half of the heated refried beans on each tortilla. Top each with an egg, and then spoon the tomato-chili mixture over the top. Season with salt to taste.
Step 8
Serve immediately, with additional toppings like avocado, cheese, or cilantro if desired.
