Huevos rancheros is such a perfect brunch to make!
Delicious salsa, avocado, eggs, beans... All layered on a beautiful tortilla!
Takes some effort to prepare, but brings a lot of happiness and deliciousness! =)

1onion

2cloves garlic
pressed
1bell pepper
cut into cubes
2tomatoes
cut into cubes
½ cupzucchini
cut into cubes, optional
1 pinchdry parsley
½ cuptomato juice
1 tspchilli powder
salt
to taste
pepper
to taste

Salsa preparation
Step 1
In a big pan saute some onions. After a few minutes add pressed garlic and soon after the peppers.

After a few minutes add tomatoes and zucchini. Saute for a few more minutes and add some tomato juice or water if too dry. Add parsley in too.

Add chilli powder and salt and pepper to taste.

Your salsa is ready! Set it aside for assembly! If you have some leftovers you can easily keep it a fridge and add to other dishes!
Avocado mash preparation
Step 5
Put all the ingredients into a smaller bowl and mash together.
Taste and adjust the seasoning if necessary.

Avocado mash done! Set aside for the assembly.
Eggs sunny side up preparation
Step 7
On a bigger pan (to accommodate 4 eggs) melt down the butter with the oil. Gently crack the eggs - the pan has to be hot but not too hot. Salt and pepper to taste, add the water and put the lid tightly on over the pan!

Cook the eggs for a few minutes on a lot to medium heat, and resist not opening the lid too early.

Once you see the thin white layer over the yolk they are as perfect as they can be - all the eggwhite done, and all the yolky goodness runny as hell. =)
Place on a paper towel to dry.
Bean spread preparation
Step 10
Melt the butter in a smaller pot on a medium heart.

Add the beans, cumin, salt and pepper to taste and mash roughly over the low heat for a few minutes - it doesn't have to be a smooth paste.

Bean spread is ready! Let's start the assembly!

Toast lightly the tortilla on both sides in the pan over medium-high heat.

Place tortilla on the serving plate and spread some of the prepared beans.

Spread some avocado mash over the beans.

Place the eggs oner the avocado.

Spoon some salsa (or a lot) on one side and sprinkle with crumbled feta and parsley.
