Instructions

Step 1
1. Sprinkle gelatine over water in a small bowl. Leave to stand for 10 minutes.

2. Dissolve gelatine over a pan of hot water and cool slightly.
Step 3
To microwave: Cook for about 30 seconds, stirring every 10 seconds, until dissolved. Cool slightly.

3. Beat egg yolks and sugar together until thick. Transfer to a double saucepan (or basin standing over a saucepan of simmering water). Alternatively use a thick based saucepan.

4. Add milk. Cook, stirring, until custard thickens and coats back of a spoon thinly. (Do not boil or mixture will curdle.)

5. Remove from heat and add vanilla and dissolved gelatine.

6. Whisk egg whites to a stiff snow and fold into custard mixture.
Step 8
7. Pour into a 1.1 litre (2 pint) mould, first rinsed with cold water.
Step 9
8. Chill until firm and set. Turn out on to a plate.
