1. Preheat the oven to 200C. Coat a large rimmed baking sheet with oil. 2.Arrange the sweet potato, carrots, fennel, ginger and garlic in a single layer on the baking sheet. 3. Transfer the baking sheet to the oven and bake until the vegetables have softened, about 15 minutes. 4. Add the tempeh, broth, and tamari. 5. Return the baking sheet to the oven and bake until the tempeh is heated through and lightly browned, 10 to 15 minutes. 6. Add the scallions, mix well, and serve.
