Instructions
Step 1
Fry the chicken on both sides in the olive oil (doesn't have to be fully cooked, just the sides should be golden brown) and take it out of the pan
Step 2
Add the chopped vegetables into the pan and toast them for 5 minutes
Step 3
Add the wine, tomatoes, the chicken and herbs. Season with salt and pepper and simmer for 30 minutes. Stir a few times.
Step 4
Garnish with parsely
