Gluten-free Veggie and cheese lasagna

Everyone has their own cooking style. Personally, I like to refer to a number of recipes and then improvise to suit what ingredients I have and then make something that I can call my own. This time I outdid myself with this amazing gluten free, vegetarian and protein-rich lasagna that served as a wholesome, filling dinner that lasted us 4 days and tasted better with each passing day! Here is the recipe. Hope you enjoy it as much as we did 😊

Instructions

Step 1
Prepare brown rice lasagna sheets as per box instructions. Oil and lay all sheets separately.
Step 2
In a large skillet, heat some olive oil and sauté minced garlic with finely chopped veggies of your choice until soft. I used zucchini, red peppers, broccoli, carrots, mushrooms, olives and spinach
Step 3
Grate 1/2 lb cottage cheese (paneer) and about 2 cups mozzarella cheese for layering
Step 4
Pre-heat oven to 350 F and start layering the lasagna while it heats
Step 5
Grease a large flat oven safe pan with olive oil
Step 6
Evenly spread a thick layer of marinara/tomato basil sauce on it
Step 7
Now add a thick layer of sautéed veggies topped with a thick layer of grated cottage cheese
Step 8
Lay out half of the lasagna sheets and add another layer of sautéed veggies on top
Step 9
Lay out the remaining lasagna sheets on top and add shredded mozzarella cheese on top. Sprinkle fresh rosemary on top
Step 10
Cover with foil making sure the foil doesn’t touch the cheese surface and place in the oven for 30-35 mins
Step 11
Remove the foil covering a cook for another 10 minutes to brown the cheese 🧀 Let it cool for at least 20 mins before serving. Best served when completely cooled down!
