Cheesy Tomato and Yellow Squash Casserole

Ingredients
8 servings
6tomatoes
ripe, sliced 1/4 inch
2yellow squash
medium, sliced
2 cupsmild cheddar
shredded
½ cupparmesan shredded
1 tspdried basil
1 tspdried oregano
1 tspdried thyme
1 Tbspgarlic powder
1 tspsea salt
1 tspcracked black pepper
For the topping
Instructions
Step 1
Preheat oven to 375 degrees
Step 2
In a medium mixing bowl, combine cheddar, parmesan, basil, oregano, thyme, garlic powder, salt and pepper
Step 3
Spray a 9X13 inch casserole dish with nonstick cooking spray, making sure to get the sides as well
Step 4
Layer yellow squash evenly. Next, layer tomato on top evenly.
Step 5
Top with half of cheese and seasoning mixture
Step 6
Repeat for a second layer
For the topping
Step 7
In a medium skillet, melt butter and add onion until translucent, low to medium heat
Step 8
Add panko bread crumbs and incorporate until all the bread crumbs are nicely coated with butter onion mixture
Step 9
Top casserole with topping mixture and cover with aluminum foil.
Step 10
Cook for 25-30 minutes
Step 11
Remove cover and cook for additional 10 minutes
Step 12
