Healthy Pasta Sauce with Pan Seared Scallops

This refreshing, delicious, and healthy pasta sauce on protein pasta goes beautifully with pan seared scallops. Though scallops seem like a difficult protein to make at home - it’s really quite simple and takes 5 minutes to prepare and cook!

0.5onion
6 clovesgarlic
5 cupskale
2 Tbsplemon juice
0.5lemon
zested
2 Tbspolive oil
1 tspsalt
¼ tspblack pepper
1 tspred pepper flakes
⅓ cupParmesan

Instructions
Step 1
Start by boiling water for your pasta. Prepare pasta as instructed, but save 1/4 cup of pasta water for later! (You can use whatever pasta you’d like - I did a protein pasta)
Step 2
Chop your garlic into small chunks, and cut your onion into 8ths. They’ll be blended, so no need to make it beautiful
Step 3
Heat up an oiled or nonstick pan over medium high heat. Add your garlic and stir for 1 min to infuse the flavor into the oil. Add in the onion, and cook until it gets soft - around 5 minutes
Step 4
While it’s cooking, add the rest of the ingredients into the blender (kale down to the Parmesan). Once the garlic and onion are ready - add it in.
Step 5
Blend on high for 1 minute, or until there are no chunks left.
Step 6
Once the pasta is ready, mix it together with the sauce and plate it. You want everything to be ready before starting the scallops.
Step 7
Pat your scallops dry, then season with salt and pepper on both sides.
Step 8
Melt butter on a pan over medium high heat. Once it starts bubbling, add in your scallops. Let it sear for 1-2 minutes, then flip. It should be a beautiful golden brown, and flip easily.
Step 9
Serve hot on the side of your pasta. Optional to serve with lemon (I like squeezing it onto my scallops) and more parmesan
