Fraser Island Pipis on Spaghetti

I caught pipis from Kawana Beach in Australia. Placed them in a bowl of sea water and left them overnight with a black T-Shirt on the top of them so they would purg. The next day I cooked them in this meal!

Instructions

Step 1
If the pipis are caught fresh, leave them in a bowl of ocean water that is 4 inches deeper than they are overnight.
Step 2
1. Boil spaghetti for 10 minutes
Step 3
2. Fry the diced onion, capsicum, chilies & garlic for a couple of minutes in a frying pan with olive oil.

3. Add your pipis & generous splash of white wine to the pan.
Step 5
4. Place a lid on the pan and cook to 3 to 5 minutes until the Pipis open.
Step 6
5. Once the pipis have opened remove them from the pan so they don’t overcook.
Step 7
6. Now add your diced vine tomato and the tin of diced tomatoes to the pan to make a sauce.
Step 8
7. Add lemon rind and a good squeeze of the lemon to the pan
Step 9
8. Stir the sauce to a nice thick consistency.
Step 10
9. Now add your spaghetti and pipis back to the pan.
Step 11
10. Add basil and parsley to the pan
Step 12
Stir the meal for another minute and serve.
