Instructions
Step 1
Cut the garlic, onion, ginger and sayote, and set aside.
Step 2
Heat up a pot till it is hot. Sear chicken thighs skin side down. Once it gets color, flip and sear the other side. When both sides of chicken are seared, set aside in a bowl.
Step 3
In the same pot, sautee the onions, garlic, and ginger until the onions turn slightly translucent.
Step 4
Add back the chicken and one can coconut milk. Season with fish sauce. Bring to a simmer and add long green pepper. Cover and let cook for 18 minutes.
Step 5
Next, add sayote and cover again. Cook till the sayote is tender. Approximately 5 minutes.
Step 6
Turn off the heat. Add in the baby spinach and stir until it is wilted. Check for seasoning, the serve.
