Ingredients

2 Tbspolive oil
1yellow onion
diced
1clove garlic
minced
1 cupbrown rice
rinsed anc parboiled then drained after 5 minutes
1 ½ tsptumeric
1 tsppaprika
1 ½ cupschickpeas
drained and rinsed
1bell pepper
diced
1 cupfrozen corn kernels
1 cupfrozen peas
1 cupsvegetable broth
1 ½ cupsdiced tomatoes with juices
Red Hot sauce
to taste
Instructions
Step 1
Heat oil in instant pot with saute normal for 2 minutes
Step 2
Dice onion then saute on normal for 3 minutes stirring occasionally to coat with oil and prefer sticking
Step 3
Mince garlic and saute with onion for 1 minute
Step 4
Add drained parboiled rice to pot
Step 5
Add remaining ingredients stir to combine then cook on high pressure for 18 minutes allow 10 minutes for natural release
