Miso Glazed Eggplant

Great appetizer/ side dish. Vegan, Vegetarian friendly! If you want the spicy version of this, you can add red chili pepper flakes in a miso glaze. I use micro-wave as a shortcut. Check my Tik Tok (@kuritomo), and my Instagram (kuritomo_cooking)!

Instructions

Step 1
First, slice the eggplant in half, lengthwise. Then score the inside flesh of each half with a knife in a criss-cross pattern. Soak the eggplants to the water for 10 minutes.
Step 2
In a small bowl, combine the miso glaze ingredients well.
Step 3
Place eggplants in a microwave-safe food container, and cook for 3 minutes.
Step 4
Place the eggplant in a baking pan, pour miso glaze on top. Broil the eggplant for about 3-6 minutes until browned.
Step 5
Garnish with green onion, and serve.
