Instructions
Bruschetta
Step 1
First slice the bread into your desired portions
Step 2
Next drizzle with olive oil and season with salt
Step 3
Place in 180ºC oven until golden brown

Once golden brown and toasty, remove from the oven and rub each slice with half a garlic clove
Creamy Cheese Spread
Step 5
Place all 3 kinds of cheese into a blender along with the 5ml of olive oil and double cream.

Season with lemon and salt to taste

Blend well until the mixture reaches a smooth and creamy consistency
Tomatoes
Step 8
Dice the tomatoes and place in a bowl
Step 9
Drizzle with olive oil and season with salt

Garnish with thinly sliced chives
Assembly
Step 11
To assemble, take a piece of toasted bread and slather generously with the creamy cheese spread leaving a divot in the center
Step 12
Place a scoop of tomatoes in the divot of each slice of bread
Step 13
Finish with more olive oil, freshly cracked black pepper and more chives
