Instructions
Step 1
Slice your bread and drizzle some extra virgin olive oil on top.
Step 2
Toast your bread slices on a hot griddle pan for about 6 mins each side or until nice and toasted.
Step 3
You can also toast your bread in the oven for about 7/8 mins each side (200C/390F).
Step 4
In a blender, add ricotta, 2 tablespoons extra virgin olive oil, a pinch of salt and pepper, some lemon zest and rosemary. Mix everything for a minute or until creamy.
Step 5
In a pan over medium low heat, drizzle olive oil, add garlic cloves and cherry tomatoes (do not chop them).
Season with salt and pepper and cook for about 8/10 mins, depending on how much you prefer them to be cooked.
Step 6
Spread some of your ricotta cream on top of your toasted bread and add some of your cooked tomatoes.
Step 7
Tear some basil and add it on top along with some of the juices of your tomatoes to make it super sexy. Buon appetito!
