Είναι ίδια με την «Αμερικάνικο Κέικ Καρότου με Γλάσο Τυριού» από www.sintagespareas.gr (Μάιος 2010 - 5/6) - με τις διαφορές όπως τις έχω σημειώσει.
Είναι η συνταγή της Γιώτη μόνο που θέλει πιο πολλά καρότα (πιο κοντά στην Αμερικάνικο Κέικ Καρότου με Γλάσο Τυριού
Το ενδιάμεσο είναι το ιδανικό ίσως με πιο πολλά καρύδια (είχα λιγότερα)
[18/11] Έβαλα Lurpak και λίγο λάδι και δεν έπηζε έυκολα. Μάλλον δε θέλει Lurpak, εκρός αν κατά λάθος έβαλα πιο πολύ λίπος. Επίσης στην αναλογία δε χώρεσε στη φόρμα του κέικ με τον ίσιο πάτο. Θέλει μεγάλο ταψάκι.
Τελικά το κάνω με όσα καρότα λέει και με λάδι και είναι μια χαρά.

295mlvegetable oil
2 cupswhite sugar

Instructions
Step 1
Preheat oven to 175 C
Step 2
Grease and flour a 23x33 cm pan.
Step 3
In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla.
Step 4
Mix in flour, baking soda, baking powder, salt and cinnamon.
Step 5
Stir in carrots. Fold in pecans. Pour into prepared pan.
Step 6
Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Step 7
Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
Alternative Method
Step 8
Heat the oven to 180°C and grease a 23 X 33 cm pan. Put the flour, coconut, walnuts (if desired), baking powder, salt, cinnamon, cloves, and allspice in a large bowl and stir to combine. Beat ¾ cup (1½ sticks) butter, the oil, and the brown sugar with the paddle attachment of a stand mixer (or with a handheld mixer) until light and fluffy. Add the eggs and 2 teaspoons vanilla extract and beat for 2 minutes. Gently stir in the flour mixture, then fold in the carrots. Transfer the batter to the greased pan and bake until a knife inserted into the center of the cake comes out clean, 30 to 40 minutes.
To Make Frosting:

In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla.

Beat until the mixture is smooth and creamy. Stir in chopped pecans.
Step 11
Frost the cooled cake.
Step 12
Meanwhile, beat the remaining ¼ cup (½ stick) butter and the cream cheese with the paddle attachment of a stand mixer (or with a handheld mixer) until well combined. Add the powdered sugar and beat on low speed to combine, then add the remaining 1 tablespoon vanilla. Beat for at least 10 minutes.
