Instructions

Step 1
Peel carrots, chop celery down, rough chop shallot and prep garlic. Add all to food processor and blitz to consistency you prefer.
Step 2
For sauce - Bring large dutch oven (6qt) up to high heat, and brown off the beef and sausage. once done, remove the meat to secondary plate/bowl
Step 3
Add mirepoix to pan, add salt, and cook down scraping up fond. After softened, add tomato paste and let it bloom
Step 4
add red wine to deglaze pan, then add whole can of tomatoes, fill can with water (or stock) and add to pot. Smash whole tomatoes to size you prefer (you can blitz in same food processor if desired)

Bring to boil with lid barely offset, then lower heat to low and simmer for 3-4 hours. Optionally add sprig of basil and parm rind if you have them
Step 6
While this is going, add italian seasoning and garlic powder to milk and let it infuse
Step 7
FOR PASTA: combine 00 flour and semolina along with pinch of salt to a mound, crating crater in the center. Add eggs and egg yolk, 1-2 tbs olive oil, and combine to good dough ball. Knead for 7-8 minutes usually, then let rest for 1 hour.
Step 8
Divide pasta up in manageable amounts, roll out to a 6 on Atlas 150 pasta roller, dust and set under a towel until ready to cook

FOR BECHAMEL: in small saucepan, add 2tbs butter and melt. Add 2tbs flour and combine, cooking off flour and working out lumps. Slowly add 1/2 cup of milk, stirring constantly to avoid clumps. (optionally strain off seasonings, but not necessary) Once fully incorporated, slowly add 25g parmesan and stir. Let cook until it nicely coats the back of a spoon
Step 10
In large pot of boiling water, cook pasta until it floats, ~60 seconds. Set into ice bath to stop cooking, lay flat on towels
Step 11
Taste sauce for seasoning, add salt and pepper as necessary, remove basil and parm rind if still in there.

Preheat oven to 350

ASSEMBLY: On the bottom of a 9x13 pan, add layer of meat sauce, then: Noodles Sauce Béchamel Parm until you reach the top, on top layer, add mozzarella as well.
Step 14
Cook for 30 minutes, remove foil, rotate pan, and cook uncovered for additional 20-30 minutes or until cheese is browned up.
Step 15
let rest for 15-20 minutes MINIMUM, before slicing and serving
