Instructions
Step 1
1 Melt the butter in a large pan and add the bacon, onions, leek, garlic, caraway seeds and cayenne. Fry, stirring, for 8-10 minutes until golden
Step 2
2 Add the saffron and brandy, then stir in the flour and tomato puree. Cook gently for 5 minutes. Stir in the stock slowly and bring to the boil. Add the rice and the fish, then reduce the heat and simmer gently for 15 minutes or until the rice is cooked.
Step 3
3 Remove from the heat and stir in the prawns, parsley and cream. Season with the pepper.
