Ingredients
4 servings
1 lbbeef eye round
or pastrami, it should shred nicely, but its ok if u don’t
10 cwater
2 Tbsgochujang
1 Tbsgochugaru
2 Tbsdark soy sauce
2 Tbssesame seed oil
1 Tbsfish sauce
1 ½ Tbsmiso
2 Tbsminced garlic
1 ½ Tbsplum syrup
or 1/2 tb sugar
10scallions
depending on their size
1 handfuldaikon radish
julineed
1 handfulGosari
Preboiled, young fiddlehead/fernbreak
1 handfulmung bean sprouts
1 handfulsweet potato starch noodles
salt

Instructions
Step 1
1. Place beef in a pot of water. Boil until the meet is cooked through. Take out meat& cool.
Step 2
2. Julienne daikon radish and cut scallions so they’re about the same size. Wash bean sprouts & rinse gosari.
Step 3
3. Shred beef with your hands, rip it a long the grain into bite sized strips. Mix gochujang, gochugaru, sesame seed oil, miso, fish sauce, garlic, plum syrup, and pepper. Massage it into the beef.
Step 4
4. Add massaged meat, daikon, gosari, mung bean sprouts, mushrooms if you’re adding, noodles and shredded scallions into pot. Cover and boil for 10-15 minutes. Taste the broth- if it needs more oomph I recommend you add soy sauce and /or fish sauce. If you’re boiling it for longer than 15 I recommend adding water 1/2 cup at a time to maintain the broth.
