Bonnie's Tebaloi Sarawak

My Name: Bonnie Bunyau Gustin. Dwarf-Sized Para Powerlifting Athlete from Sarawak, Malaysia. Gold Medallist at Tokyo 2020 Paralympic Games in 72kg Category Event. Set World Record lifting 228kg. Defending World Champion. Come from a family of Powerlifters – Father was also a powerlifting athlete. Tebaloi is famous traditional snack in Sarawak. Due to stringent food controls to comply to Anti-Doping Measures, especially in strength-based sports like powerlifting, I have to be careful in what I eat and we are constantly monitored by our sports authorities. Tebaloi is primarily sago based and is a quick snack food. For my long training hours, I need energy-based snacks and Tebaloi is one of my favourite and safe snacks when preparing for major international competitions. Try looking in an Asian supermarket for sago flour - if you can't find it, try substituting with plain flour.

Instructions

Step 1
Preheat the oven to 180c.

Add the sugar and the egg to a mixing bowl and whisk lightly.
Step 3
In a separate bowl combine the coconut, sago flour and turmeric powder.
Step 4
Add the egg mixture to the dry ingredients and mix with a spatula or by hand to form a dough (Tebaloi) . It will be a little sticky.
Step 5
Cut the banana leaf or parchment paper to fit a large baking sheet. Place the banana leaf on a work surface, place the tebaloi on top and place a sheet of cling film on top. Using a rolling pin roll the tebaloi as thin as possible. Remove the cling film and slide the tebaloi onto the baking sheet.
Step 6
Place in the oven for 10 minutes.
Step 7
Remove the tray from the oven and transfer tebaloi onto a cooling rack, for 3-5 minutes.
Step 8
One cool flip the tebaloi onto a large chopping board or work surface and and gently remove the banana leaf or parchment paper.
Step 9
Cut the Tebaloi into squares.
Step 10
Arrange the Tebaloi squares pieces on a baking grid and bake again for 180c for 15 minutes.
Step 11
Remove from the oven and allow to cool completely. It will become crispy as it cools.
