Bell pepper
Step 1
Slice the bell pepper.
Step 2
Heat the oil in the pan. Reduce the heat to medium high. Add the bell pepper and fry for 2min. Then season and fry for another 2-3min until soft.
Zucchini
Step 3
Slice the zucchini.
Step 4
Heat the oil in the pan. Reduce the heat to medium high. Add the zucchini and fry for 2min. Then season and fry for another 2-3min until soft and golden brown.
Sandwich
Step 5
Spread both sides of the bread with olive oil and toast until golden brown.
Step 6
Meanwhile peel and thinly slice the carrot. Also slice the olives.
Step 7
Spread each bread slice with hummus.
Step 8
Top the bottom half with the olives, zucchini, bell pepper, carrot and arugula.
Step 9
Stack the other bread half on top and enjoy!
