Homemade Modern Market Salad with Maple Vinaigrette

This sweet potato salad is similar to Modern Market salad. It's made with boiled sweet potatoes (white & orange), mixed greens, walnuts, cranberries, red onion, feta cheese, and a delicious 🍁homemade maple dressing. It's very good served with soup and rustic 🍞 bread!

Ingredients
2 servings
2sweet potatoes
boiled, cooled, cut into cubes
1 cupolive oil
pure
1 tubmixed greens
from produce section, any kind
1 bagdried cranberry and glazed walnut salad topping
1red onion
thinly sliced
4 tablespoonspure maple syrup
¼ cupapple cider vinegar
2 tablespoonsdijon mustard
cracked black pepper
feta cheese
or blue cheese crumbles
Instructions
Step 1
Peel potatoes, & boil sweet potatoes until cooked. Drain and cool the potatoes in fridge. Once cooled, Dice the potatoes and add to greens. Thinly slice red onion and add to the greens. Mix in dried cranberries, walnuts, feta cheese.
Step 2
To make dressing, mix in bottle or jar with tight lid: 1 cup olive oil, 1/4 cup apple cider vinegar, 4 tablespoons maple syrup, 2 tablespoons dijon mustard, cracked black pepper. Shake well and pour over salad.
